Riviera Maya Escape maintains a small, hand-picked roster of chefs who work exclusively with our clients. Several have run Michelin-starred kitchens in Mexico City, Paris and New York before choosing to cook here for a discerning international clientele. Each one is briefed personally on your preferences before the first pan touches the fire.

How the in-villa experience works

Two to three weeks before arrival, we send a short preferences form: favourite ingredients, allergies, cuisines you love and cuisines to avoid, wines you drink, an anniversary or a birthday to celebrate. Your concierge shares the answers with the chef, who returns two or three proposed menus per meal for you to choose from — or, if you prefer, simply surprises you.

On the day, the chef arrives with a sous-chef three to four hours before service. Groceries are shopped that morning at the markets and specialty suppliers we work with year-round. Everything is prepared, plated and served in your villa: table set with linen and candlelight, wine poured, plates presented one by one. When the last coffee is served, the kitchen is left cleaner than it was found.

Cuisines the roster covers

Modern Mexican and Yucatecan is where several of our chefs trained — cochinita pibil served in banana leaf, seven-mole tastings, ceviche flights, chocolate tasting menus built around single-estate Chiapas cacao. Franco-Mexican brings the technique of a French brigade to Riviera Maya ingredients: sea bass in salt crust, roasted duck with tamarind, soufflé Grand Marnier on the terrace after dinner. Mediterranean, Italian, Japanese and Peruvian are equally well represented, alongside a fully plant-based fine-dining programme for wellness weeks.

For events, we produce beach barbecues that go far beyond the phrase — whole grilled fish over embers, wood-fired tortillas, tiraditos on ice, tequila and mezcal flights curated by producers we know personally. For quieter evenings, a candlelit dinner for two on the sand or in the shallows at low tide.

Diets, allergies and children

Every chef in our roster is comfortable with vegan, vegetarian, gluten-free, kosher, halal, low-FODMAP, keto, nut and shellfish allergies. We do not treat dietary requirements as a constraint; the menu is designed around them from the first sketch. Children's menus are handled separately — never an afterthought — with fresh, gentle dishes served at the times that fit family rhythm.

For guests travelling with dedicated nutritionists or personal trainers, the chef coordinates directly with them so that macros, timings and hydration match the programme exactly.

Beyond the villa: yachts, beaches, cenotes

Our chefs travel. Full menus are produced on private yachts, at cenotes for a private lunch under the limestone, on empty beaches lit only by candlelight, and at archaeological sites after hours. Every logistical detail — refrigeration, ice, table, staff, linen, glassware — is handled end-to-end by the concierge.

For guests staying in one of our luxury villas, the chef service is added on request; for guests planning a proposal, wedding or celebration, we build the entire evening around the meal.

A note on pricing

Chef service is quoted transparently: the chef's fee, the sous-chef, the service brigade for larger tables, the groceries at cost, and any bar programme selected. There are no hidden mark-ups. A typical three-course dinner in-villa for six to eight guests starts around USD 110 per person; tasting menus of six or more courses with a Michelin-trained chef start higher.
